Recipe: Sumptuous Single Bean Salads

It's SUMMER HERE IN RSA!

And here on the North Coast Salads are the best and most comfortable food to eat and prepare.

Many have the opinion that salads are drab, tasteless and all around not fulfilling enough to be a meal.

Here are a few that are easy, tasty, healthy and because they are made from beans (a great source of protien and fiber) they will fill you right up without leaving you feeling heavy. ENJOY!

Serves: 2

INGREDIENTS

  • 1 can of kidney beans or black beans, drained and rinsed

  • 1 can of corn (or about 1.5 cups fresh/frozen corn)

  • Half a cucumber, finely diced

  • ¾ cup (100g) of crumbled feta

  • 1 cup (50g) chopped of cilantro or parsley

  • 0.5 cups chopped celery or green onions (about one green onion)

  • For the dressing:

  • Juice of half a lime

  • 2 tbsp olive oil

  • 1 tsp dijon mustard

  • 1 clove of garlic

  • 1-2 tsp of ground cumin

  • 0.5 tsp of oregano

  • A pinch of salt and pepper to taste

INSTRUCTIONS

  1. Well, the ingredients say everything you need to know already, but let's elaborate just in case:

  2. Rinse the corn and the kidney beans.

  3. Dice up the cucumber and chop the cilantro or parsley.

  4. Then chop the green onion. So far so easy.

  5. Get a big bowl and throw in everything you rinsed and chopped. Now crumble in the feta and give it a good mix.

  6. Get a small bowl and add all the ingredients for the dressing. Stir, then taste to make sure it's fine.

  7. When approved, mix in the dressing to the salad.

  8. And there you have it, your salad is ready!

Serves: 2

INGREDIENTS

  • One can chickpeas (rinsed)

  • Large handful of spinach (about 100g should do it)

  • 100g soft cheese (like feta)

  • ½ lemon or 1 tbsp white or malt vinegar

  • 1 tbsp honey

  • 5 tbsps olive oil

  • Pinch of cumin

  • Pinch of salt

  • Couple of chili flakes (or dried cayenne pepper will do the trick nicely)

  • Small handful of raisins (or malt loaf, chopped, if you have it)

INSTRUCTIONS

  1. Chop the cheese and add with the spinach and chickpeas to a large bowl

  2. Mix the honey, oil, lemon juice and raisins in a small bowl

  3. Add the cumin, salt and pepper to the dressing bowl and mix well

  4. Drizzle devilishly delicious dressing over the salad
